Japanese Recipe – 57

Spinach Ohitashi

Ohitashi is boiled green leafs with Ponzu dressing. It is healthy and low in fat.


 
 

Ingredients (Serve 2)

  • 1 bunch of spinach
  • 2 tablespoon of Ponzu
  • Sprinkle twice of Katsuobushi
  • Pinch of salt

 

Method

  1. Wash the spinach well, cut off the roots. In a large pot, boil plenty of water and add a pinch of salt. When it comes to a boil, put spinach in a pot starting from the stem. Make sure not to overcook it.
  2. Drain the water, and immediately soak the spinach in cold water.
  3. Take the spinach out of water and squeeze the water out of spinach. Cut them into bite sized pieces.
  4. Dress boiled spinach with the Ponzu dressing and sprinkle Katusobushi and enjoy.

 

Katsuobushi

Katsuobushi is dried, fermented, and smoked skipjack tuna. Katsuobushi is often used as flakes shaved from a piece of dried fish.

 

Ponzu

Ponzu is a citrus-based sauce used in Japanese cuisine as a marinade or an addition to soy sauce.

Japanese Recipe – 58

Beef Teriyaki Don

Don means rice bowl dishes. In simple words, Beef Teriyaki Don is rice bowl with beef steak in a tasty Teriyaki sauce. It is very flavourful and easy to cook.

 

Ingredients (Serves 4)

  • 800g beef
  • 4 tablespoon of Teriyaki sauce
  • 2 teaspoon of oil
  • 1kg Japanese rice
  • Chopped green onion

 

Method

  1. Marinade beef with Teriyaki sauce in a bowl and cover.
  2. Separate the beef and Teriyaki sauce. Heat oil in a frying pan and cook the beef each side until it is done to your liking.
  3. Put the remaining Teriyaki sauce on the same frying pan and then simmer until reduced slightly.
  4. Take out cooked beef and slice it into bite sized pieces. Serve the cooked rice in a bowl and place the beef on top. Pour the remaining sauce and garnish with spring onion.
